ENGLISH BLUE BORAGE HONEY
A speciality honey, Borage is clear and fragrant, slow to crystallize, the lightest and purest of the honey types. Some people like to keep it in the fridge as it sets to a chewy consistency, rather like toffee.
Blue Borage was given the title ‘Happy Honey’ by the Romans. They believed that the Borage herb and Borage honey increased the blood flow to the brain and made them happy. Borage is a medicinal plant and is used in herbal, homeopathic and allopathic medicine to alleviate depression.
Borage is one of the best honeys you can hope to find, and has many uses in food. Experiment with Blue Borage Honey and your favourite cheese, or drizzle it over fresh strawberries, or pistachio ice cream. Borage flowers are also a classic addition to a G&T. Cheers!
